The Ynyshir restaurant, located near Machynlleth, was rated by the Food Standards Agency, receiving a score of one out of five for hygiene, despite having two Michelin stars.


Chef Gareth Ward stated that he is not 'ashamed' of this rating, explaining that inspectors had concerns regarding the use of raw ingredients, such as sashimi-quality fish from Japan. Ward emphasized that the restaurant has strict food safety measures in place, including a high-performance freezer. He also acknowledged that some paperwork was not in order, which contributed to the poor score. The restaurant has requested a new inspection to improve its hygiene rating.
